This Week’s Dinners

I thought I’d share what we’re eating some nights of the week each week. This will help to give you an idea of how we’re tightening our food budget, which is an area in which we’ve always gone WAY over.

I can’t remember if I’ve share this with you all, so forgive me if I’m posting this twice. For Christmas, I gave Ben a George Foreman grill, some cookbooks, and I made him an apron. (The apron should be posted in a blog all its own.) These gifts also came with the use of the kitchen on the days that I’m working for ten hours. He’s been doing a great job at cooking, and I’ve been getting to relax when I get home. We both win.

This week, I asked him to use up our eggs that we getting close to expiring. So, we had an interesting form of brinner.

Don’t see eggs on that plate? That’s a good thing. It’s rare that I love to have scrambled eggs, or even an omelet with my favorite toppings. I KNOW you can see those delish potatoes that he fried in a pan with some onions. You’re also probably going to try calling that bread French toast, but I’ll deter you from that. Let me share something with you.

When I was a child, I hated French toast. (I think it was because I didn’t like cinnamon.) So, that meal was always made sans cinnamon, and titled “egg bread”. Bread dipped in egg then cooked in a pan. Egg bread. That’s all I’ve ever called it. Of course, when I got married and Ben tried to make French toast, he quickly learned that, with modification and a different title, I’d indulge. He probably still giggles when he calls it by the name I gave it.

It was so. freaking. good.

On Tuesday, I got the kitchen and made one of my hubby’s favorite meals:

red beans & rice

I never had this awesome meal until a few years ago, but I love it, too. I normally put in some celery. This time, it’s just a simple combination of Italian sausage, white rice, red beans, onion, garlic, and creole seasoning. Simple, cheap, and hearty.

Also, I promise my food doesn’t have jaundice. My iPhone camera is awesome, but our lighting in the living room isn’t.
